All you need to make them is 2 cups of pureed seedless watermelon, ½ a cup of Greek yogurt, and 2 tbsp of parsley.
First Puree the seedless watermelon in a blender, chop parsley, and place your mold on baking tray.
First insert a small piece of parsley into the bottom then add a thin layer of plain Greek yogurt. Freeze for one hour. Next, fill the remaining mold with watermelon puree. Freeze overnight or at least 4 hours.
Once frozen you can move them into a Tupperware until ready to serve! They are so good even your kids will want to sneak a treat!
